Abstract

The present invention belongs to the field of food product engineering and enzyme technology, and prepares bioactive collagen oligopeptide with skin of marine fish and fresh water fish and through enzymolysis and refining. The preparation process includes low temperature treatment of fish skin under non-neutral condition to eliminate fat and impurity by means of the synergistic effect of alkaline proteinase, neutral proteinase or acid proteinase to obtain hydrolysate; filtering, ultrafiltering, ion exchange to decolorize and desalt, vacuum concentration, spray drying and freeze drying to obtain soluble powder. Detection shows that it has molecular weight below 6000 Da. The fish skin collagen has high biocompatibility and may be used in protection and recovering of skin tissue.
